at a kitchen table in Observatory, with a second hand stove and a scale borrowed from a friend. We outgrew it quickly. The move to Salt River gave us cold storage for the oils, which matters in February when the city sits above thirty degrees. Recipes changed very little. Batch sizes doubled, the water bath got bigger, and the method stayed the same one we wrote down in that first kitchen. Anyone who visits can watch a batch being poured.
