A kota started as a hollowed out quarter loaf, filled with whatever a hungry worker could afford after a long shift. Ours follows that same idea. We cut a fresh loaf, hollow it out, pack it with chips, polony, cheese and a fried egg, then close it up tight for the road.

Our kota is not an afterthought on the menu. It is one of the first things we ever sold from this kitchen.

We still use the same bread, the same chip cut and the same chakalaka recipe we started with. The only thing that has changed is how fast it reaches you, since we now pack it to stay warm for the whole ride.

Inside every kota you get polony, cheese, a fried egg and a good scoop of chips, all sitting on atchar and chakalaka, built to eat with both hands.

Ask for it extra spicy, meat only, or with a Russian added in. Tell us when you order and the kitchen builds it the way you actually want it.

Ask around Dobsonville and most people already know exactly how they like their kota, down to the last ingredient.

"We never changed the basics. If it worked for the first customer who walked in, it still works now," says Thabo, who has run our kitchen since we opened.

That is still how we test anything new on the menu. If the regulars would not order it, it does not stay.

We wrap the loaf in foil before it goes into the bag, so the bread holds its heat without going soft.

The chips and extras travel in their own container so nothing turns soggy before it reaches your door, even on a longer drive across town.
