Why we stitch soles instead of gluing them
A glued sole is quick to make and impossible to replace properly. Once it lifts, that is usually the end of the shoe. A stitched welt costs more time at the bench, but it means the sole can be cut away and a new one put on without touching the upper you have spent two years breaking in.
